Ingredients for one serving
loaf of Naan bread
Extra virgin olive oil
thin cut grilled eggplants
1 egg (sunny side up)
3 slices of Genoa salame
1 slice of provolone cheese (or any other kind of cheese)
shaves of parmigiano reggiano
1. Cut your eggplant as thin as you can and grill with a drizzle of extra virgin olive oil. set aside.
2. Heat the Naan bread on both sides then add your sunny side up egg.
3. Layer up each one of the ingredients (Salame, eggplant slices, and cheese).
4. Top with shaves of parmigiano reggiano, chopped parsley and Kosher salt.
5. Fold, and enjoy! :)
